8 Must Try Vegetarian Soups This Winter

We are not out of winter yet, and if you’re anything like me you’re always craving warm, delicious food to get you through these cold days and nights. I am always on the search for tasty, easy, vegetarian soups to try. So I have gone through my favorite soups that I have made over the years and compiled a list with direct links to recipes for you to have access to any time you need! These are seriously rich, inviting soups so don’t sleep on making them. 

1.Mexican street COrn Chowder

It’s corn!! There is something irresistible about the combination of corn, spices, cheese, and fresh cilantro that gets me every time. Now you can have the wonderful flavors of Mexican Street Corn in a chowder! 🌽

2. Thai Coconut Soup

When I tell you I could eat Thai food every day, I am not lying. I just really love everything, but especially this coconut soup during winter! For a vegetarian option sub the shrimp for cubed tofu. I promise it’s just as good! 🤤

3. Greek White Bean Soup With Garlic & Lemon

Greek-style soup? Umm…yum! Hearty white beans, freshness from the lemon, and familiarity from the garlic? This is a great soup that is sure to hit all the amazing flavor points!

4. Black bean soup

Black bean soup is one of those soups that is never going out of style. A classic for a reason. Don’t forget to pick up an avocado, cilantro, and some sour cream to top yours with! 🫘

5. Potato & Leek Soup

This is comfort soup for sure. Potatoes are so versatile and Peter does wonders with them in this soup. Don’t forget to pair it with his cheesy baguette!

6. Tomato Soup

Tomato soup has always made me wonder if we are just justifying drinking sauce… I’m still not convinced it’s not, but either way, I’m here for it!  This is a great soup to pair with grilled cheese.  Giving you two options because options are always good! 🤷

7. Tortilla Soup

Okie, some honesty here. One of the saddest parts of cutting meat out of my diet was the lack of chicken tortilla soup from my local Mexican spot I’d be having. Luckily most of the flavor can be replicated without the chicken! Definitely worth a try!

8. Creamy Mushroom Soup

Last, but for sure not least, a creamy mushroom soup! Mushrooms have such a yummy rich flavor that pairs beautifully with a creamy broth. Add some egg noods if you’re looking for a heartier vibe. 

I can’t wait for you to try any and/or all of these soups! Soup is so cozy and is a perfect thing to make if you’re having people over for dinner! Open a bottle of wine, slice that baguette, and have yourself a night. These warm bowls are sure to make your winter a little more comfortable.
